Marinate the Alligator
In a bowl, combine alligator pieces with buttermilk. Cover and refrigerate for at least 1 hour.

Prepare the Breading
In a shallow dish, mix cornmeal, flour, Cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Alligator Bites
Remove the alligator from the buttermilk, allowing excess to drip off. Dredge each piece in the cornmeal mixture, ensuring they are fully coated.

Fry the Bites
Carefully add the breaded alligator bites to the hot oil, frying in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the fried alligator bites hot with red pepper garlic aioli on the side.
