    Marinate the Catfish

    In a bowl, combine buttermilk and hot sauce. Add catfish fillets and marinate in the refrigerator for at least 1 hour.

    Prepare the Coating

    In a separate bowl, mix cornmeal, flour, baking powder, salt, black pepper, cayenne pepper, and garlic powder until well combined.

    Heat the Oil

    In a deep skillet or pot, heat oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Catfish

    Remove catfish from the marinade, allowing excess buttermilk to drip off. Dredge each fillet in the cornmeal mixture, coating evenly.

    Fry the Beignets

    Carefully place coated catfish fillets in the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

    Drain and Serve

    Remove the beignets from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot.
