    Prepare the Calamari

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Dredge the calamari rings in the mixture until fully coated.

    Fry the Calamari

    In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Fry the calamari in batches for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer the fried calamari to a paper towel-lined plate to drain excess oil.

    Prepare the Creole Sauce

    In a separate saucepan, prepare a creole sauce of your choice or use a store-bought version. Simmer until warm.

    Assemble the Dish

    On a serving plate, spread a layer of the creole sauce. Top with the fried calamari, and then sprinkle the giardiniera and grated parmesan cheese on top. Serve immediately.
