Method

Preparation

  1. 1

    Prepare Cajun Fries

Peel and cut the potatoes into thin fries. Rinse and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and Cajun seasoning to taste.

  2. 2

    Prepare Crab Cakes

In a bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, and 1 tsp of Cajun seasoning. Form into small patties. In a shallow dish, mix flour, cornmeal, salt, and pepper. Dredge each crab cake in the mixture. Heat oil in a skillet over medium heat and fry each crab cake until golden brown on both sides, about 4-5 minutes per side.

  3. 3

    Prepare Fried Calamari

In a bowl, whisk together flour, cornmeal, remaining Cajun seasoning, salt, and pepper. In another bowl, beat the egg and milk together. Dip calamari rings in the egg mixture, then coat in the flour mixture. Heat oil in a deep fryer to 350°F (175°C). Fry calamari in batches until golden and crispy, about 2-3 minutes. Drain on paper towels.

  4. 4

    Prepare Popcorn Shrimp

Coat the popcorn shrimp in the same flour and cornmeal mixture used for the calamari. Fry in the same hot oil until golden brown, about 3-4 minutes. Drain on paper towels.

  5. 5

    Serve

Arrange the fried calamari, popcorn shrimp, and crab cakes on a platter with the Cajun fries on the side. Serve hot with dipping sauce if desired.
