Method

Catfish Preparation

    Season the Catfish

    Rub the catfish fillets with blackening seasoning on both sides.

    Cook the Catfish

    In a skillet, heat olive oil over medium-high heat. Add the catfish fillets and cook for about 4-5 minutes per side, or until blackened and cooked through.

Crawfish Étouffée

    Make the Roux

    In a large pot, melt butter over medium heat. Stir in flour and cook, stirring constantly, until the roux turns a deep brown color, about 15-20 minutes.

    Add Vegetables

    Add diced onion, green bell pepper, and celery to the roux. Cook until softened, about 5-7 minutes.

    Combine Crawfish

    Stir in minced garlic and cook for an additional minute. Add crawfish tails, chicken broth, and Cajun seasoning. Simmer for 15 minutes, then stir in green onions.

Dirty Rice

    Cook the Meat

    In a saucepan, brown the ground beef or sausage over medium heat. Drain excess fat.

    Add Vegetables and Rice

    Add diced onion, green bell pepper, and celery to the meat. Cook until softened, then stir in rice and chicken broth.

    Add Cajun seasoning and bring to a boil. Reduce heat, cover and simmer for about 20 minutes, or until the rice is tender.

Vegetable Preparation

    Sauté Seasonal Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables and sauté for about 5-7 minutes. Season with salt and pepper.
