Prepare the Breading
In a bowl, mix the cornmeal, flour, cayenne pepper, paprika, salt, and black pepper.

Prepare the Wet Mixture
In another bowl, whisk together the buttermilk and eggs until well combined.

Coat the Catfish
Dip each catfish fillet first into the wet mixture, then dredge in the cornmeal mixture until evenly coated.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil, frying them in batches for about 4-5 minutes per side or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the oil and let them drain on paper towels. Serve hot with French fries and hush puppies.
