Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar, vanilla extract, and sour cream, mixing until fully incorporated. Add the eggs one at a time, mixing on low speed until just blended. Fold in the sliced bananas.

Pour the cheesecake filling over the cooled crust. Bake in the oven for 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

In a saucepan, melt the butter over medium heat. Stir in the brown sugar and cinnamon until dissolved. Add the sliced bananas and cook for about 2-3 minutes until softened. Remove from heat, then add the rum and ignite carefully (if desired). Allow to flame for a few seconds, then extinguish.
