Place the salmon fillet skin-side down on a large piece of plastic wrap.

Mix the cure
In a bowl, combine sea salt, brown sugar, black peppercorns, lemon zest, and orange zest. Mix well.

Apply the cure
Spread the cure mixture evenly over the salmon fillet. Add fresh dill on top.

Wrap and weight
Wrap the salmon tightly in plastic wrap. Place a heavy weight (like a cast iron skillet) on top to help compress the fillet.

Refrigerate the wrapped salmon for 24 to 48 hours. The longer it sits, the firmer and more flavorful it becomes.

After curing, remove the salmon from the wrap, rinse off the cure under cold water, and pat dry. Slice thinly at an angle.
