Method

Preparation

  1. 1

    Chop the Beef

Using a sharp knife, finely chop the Certified Angus beef tenderloin into small pieces. Ensure it is chopped evenly for the best texture.

  2. 2

    Mix Ingredients

In a mixing bowl, combine the chopped beef with Dijon mustard, Worcestershire sauce, finely chopped shallots, capers, chopped parsley, salt, and black pepper. Mix gently to incorporate all ingredients.

  3. 3

    Add Egg Yolk

Make a small well in the center of the beef mixture and carefully place the egg yolk on top. Do not mix yet.

Serving

  1. 4

    Plate the Tartare

Using a ring mold, plate the steak tartare mixture neatly on a chilled plate. Optionally, you can form it into a patty shape.

  2. 5

    Serve with French Fries

Serve immediately with a side of crispy French fries. Optionally, garnish with additional parsley or a small side salad.
