    Prep the Potatoes

    Wash and peel the Russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes them crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

    Fry the Potatoes

    Carefully add the dried potato sticks to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt and black pepper to taste.

    Serve the homemade French fries immediately while hot and crispy.
