Prepare the Ingredients
In a large bowl, season the chicken pieces with salt and black pepper. In a large Dutch oven or heavy pot, heat the olive oil over medium heat and add the diced bacon. Cook until crispy, then remove and set aside, leaving the drippings in the pot.

Brown the Chicken
In the same pot, add the seasoned chicken pieces in batches, browning them on all sides. Remove the chicken and set aside with the bacon.

Create the Sauce
Sprinkle the flour over the vegetables and stir for 1-2 minutes. Gradually pour in the red wine and chicken broth, stirring continuously to avoid lumps.

Combine and Simmer
Return the chicken and bacon to the pot. Add thyme, bay leaf, and adjust seasoning with salt and pepper. Bring to a simmer, then cover and cook on low heat for about 1.5 hours or until the chicken is tender.

Remove the bay leaf and serve the Coq au Vin hot, garnished with fresh herbs if desired. This dish pairs well with crusty bread or mashed potatoes.
