Preheat your oven to 350°F (175°C). Cut the day-old bread into cubes and place them in a large mixing bowl.

Mix the Custard
In another bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, vanilla extract, eggs, cinnamon, nutmeg, and salt until well combined.

Combine Bread and Custard
Pour the custard mixture over the bread cubes, ensuring all pieces are soaked. Let it sit for about 15 minutes to absorb the liquid.

Bake the Bread Pudding
Transfer the mixture into a greased baking dish and bake in the preheated oven for 45-50 minutes or until the top is golden brown and a knife inserted comes out clean.

Once baked, allow it to cool for about 10 minutes. Serve warm with a scoop of local Madagascar vanilla bean ice cream on top.
