Moules (Mussels)

Method

Preparation of Mussels

1

Clean the Mussels

Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any debris. Discard any mussels that are open and do not close when tapped.

2

Cook the Aromatics

In a large pot, melt the butter over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 3 minutes.

3

Add Wine and Mussels

Pour in the dry white wine and bring to a boil. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes, or until the mussels have opened.

4

Finish the Sauce

Remove the pot from heat. Stir in the chopped parsley, salt, and black pepper. Discard any mussels that did not open.

5

Serve

Ladle the mussels and broth into bowls, and serve with lemon wedges on the side.
