    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized, about 30-40 minutes.

    Add Garlic and Deglaze

    Add minced garlic to the caramelized onions and cook for another minute. Pour in the white wine and cook until reduced by half, scraping up any browned bits from the bottom of the pot.

    Simmer the Soup

    Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for about 30 minutes.

    Prepare for Gratinée

    Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with toasted bread and a generous amount of grated cheese.

    Broil

    Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes. Watch closely to prevent burning.
