For the Buffalo Ricotta Crumb

For the Crème Anglaise

Method

Brioche French Toast Preparation

  1. 1

    Prepare the Egg Mixture

In a mixing bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

  2. 2

    Soak Brioche

Dip each slice of brioche bread into the egg mixture, ensuring both sides are soaked. Allow to sit for a few minutes.

  3. 3

    Cook the French Toast

In a skillet, melt butter over medium heat. Cook the soaked brioche slices for 3-4 minutes on each side until golden brown.

Buffalo Ricotta Crumb Preparation

  1. 4

    Mix Ingredients

In a bowl, combine buffalo ricotta, breadcrumbs, Parmesan cheese, olive oil, salt, and pepper. Mix until crumbly.

  2. 5

    Bake the Crumb

Spread the mixture on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden and crispy.

Berry Compote Preparation

  1. 6

    Cook the Berries

In a saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until the berries are softened and syrupy.

Crème Anglaise Preparation

  1. 7

    Heat the Cream

In a saucepan, heat the heavy cream and the vanilla bean (if using) until just below boiling.

  2. 8

    Whisk Yolks and Sugar

In a bowl, whisk together egg yolks and sugar until light and creamy.

  3. 9

    Combine and Thicken

Slowly pour the hot cream into the egg mixture while whisking. Return to the saucepan and cook on low heat until thickened, about 5-7 minutes.
