Sweet Chili Sauce

Prepare the Pork Belly

Season the Pork Belly
Preheat your oven to 300°F (150°C). Pat the pork belly dry with paper towels. Rub the pork belly all over with salt, black pepper, and garlic powder.

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear for about 5-7 minutes or until the skin is crispy and golden brown. Flip the pork belly and sear the other side for another 5 minutes.

Roast the Pork Belly
Transfer the skillet to the preheated oven and roast for approximately 2 hours, or until the pork is tender and the skin is crispy.

Rest the Pork Belly
Remove the pork belly from the oven and let it rest for at least 15 minutes before slicing.
Make the Sweet Chili Sauce

Combine Ingredients
In a saucepan, combine sugar, rice vinegar, water, minced garlic, and red chili flakes. Stir well to combine.

Cook the Sauce
Bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 5-7 minutes, stirring occasionally.

Thicken the Sauce
In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Add the slurry to the saucepan and stir well. Cook for another 2-3 minutes until the sauce thickens.

Finish the Sauce
Remove from heat and stir in soy sauce. Let it cool slightly before serving.
