Cake Directions

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it’s hot enough to create the lava effect.

  2. 2

    Prepare the Ramekins

Grease four ramekins with butter and lightly dust with flour. This will prevent the cake from sticking.

  3. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  4. 4

    Mix Wet Ingredients

In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined and slightly frothy.

  5. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

  6. 6

    Add Dry Ingredients

Sift in the flour and salt, and gently fold the mixture until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the cake to fall out. Serve immediately with a scoop of vanilla ice cream on top.
