Preparing the Ribeye

    Season the Ribeye

    Pat the ribeye steak dry with paper towels. Rub both sides with olive oil, then season generously with salt, black pepper, garlic powder, and rosemary. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate.

    Preheat the Grill

    Preheat your grill to high heat (around 450-500°F or 232-260°C). If using charcoal, let the coals burn until they are covered with white ash.

    Grill the Ribeye

    Once the grill is hot, place the ribeye steak on the grill. Cook for about 4-5 minutes on one side without moving it to achieve nice grill marks. Flip the steak and cook for an additional 4-5 minutes for medium-rare, adjusting the time if you prefer it more or less cooked.

    Rest the Steak

    Remove the ribeye from the grill and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute throughout the meat.

    Prepare the Vegetables

    While the steak is resting, wash and chop the seasonal vegetables into bite-sized pieces.

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

    Grill the Vegetables

    Place the seasoned vegetables on the grill alongside the steak during the last 5-7 minutes of cooking, turning occasionally until they are tender and slightly charred.
