Preparing the Potatoes

Wash and Peel Potatoes
Begin by thoroughly washing the Russet potatoes under cold water to remove any dirt. Using a vegetable peeler, peel the skin off each potato.

Cut the Potatoes
Once peeled, place the potatoes on a cutting board. Cut each potato into thin strips, approximately 1/4 inch wide, to create fries.

Soak the Potatoes
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and will result in crispier fries.
Frying the Fries

Heat the Oil
In a large pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer to monitor the temperature for optimal frying.

Dry the Potatoes
After soaking, drain the water and pat the fries dry with paper towels. Remove as much moisture as possible to prevent the oil from splattering.

Fry the Potatoes
Carefully add the dried fries in batches to the hot oil. Fry for about 5-7 minutes or until they are golden and crispy. Avoid overcrowding the pot.

Remove and Drain
Once the fries are golden brown, use a slotted spoon to remove them from the oil. Place them on a plate lined with paper towels to drain excess oil.

Season the Fries
While the fries are still hot, sprinkle the salt evenly over them to season.
Serving

Serve with Ketchup
Place the crispy fries in a serving bowl and serve immediately with ketchup on the side for dipping.
