Prepare the Burger Patty

In a bowl, combine ground beef, salt, and black pepper. Mix gently until just combined.

Shape the mixture into two equal patties, making a slight indentation in the center of each to prevent puffing.
Cook the Burger

Cook the burger patties for about 4-5 minutes on one side.

Flip the patties and place a slice of pepper jack cheese on each patty. Cook for an additional 4-5 minutes or until the cheese is melted and the burger is cooked to your desired doneness.
Make the Chipotle Mayo

In a small bowl, mix together mayonnaise, chipotle peppers in adobo sauce, and lime juice until well combined.
Assemble the Burger

Toast the burger buns on the grill or in a toaster until lightly browned.

Spread a generous amount of chipotle mayo on the bottom half of each bun.
