Method

Prepare the Breakfast Potatoes

    Prep the Potatoes

    Wash and dice the potatoes into small cubes.

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, pepper, and paprika. Cook for 15-20 minutes, stirring occasionally, until potatoes are golden brown and tender.

Prepare the Burrito Filling

    Cook the Bacon

    In a separate skillet, cook the bacon slices over medium heat until crispy. Remove from skillet and place on a paper towel to drain excess grease.

    Cook the Beef

    In the same skillet, add the ground Angus beef. Season with salt and pepper to taste. Cook until browned, about 7-10 minutes, breaking it apart with a spatula.

    Fry the Eggs

    In another skillet, fry the eggs sunny-side up or to your liking, about 3-5 minutes.

    Cook the Tater Tots

    While the eggs are frying, cook the tetris tots according to package instructions until crispy.

Assemble the Burritos

    Layer the Ingredients

    On each large flour tortilla, layer half of the cooked ground beef, bacon, cheddar cheese, mozzarella cheese, tetris tots, and a fried egg.

    Add Ketchup

    Drizzle ketchup over the top of the fillings to taste.

    Wrap the Burrito

    Fold the sides of the tortilla inwards and then roll it up from the bottom to form a tight burrito.

Serve

    Plate the Dish

    Serve the burritos warm with a side of breakfast potatoes.
