Method

Preparation

  1. 1

    Marinating the Chicken

In a bowl, combine olive oil, lemon juice, oregano, salt, and black pepper. Add the chicken breasts and coat them in the marinade. Let them marinate for at least 30 minutes.

  2. 2

    Preparing the Vegetables

While the chicken is marinating, chop the romaine hearts into bite-sized pieces, slice the cucumber, dice the tomatoes, and thinly slice the red onion. Set aside.

  3. 3

    Preparing the Dressing

In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and black pepper until well combined. Set aside.

Grilling

  1. 4

    Grilling the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Grill for about 5-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes before slicing.

Assembly

  1. 5

    Assembling the Salad

In a large bowl, combine the chopped romaine, cucumber slices, diced tomatoes, and red onion. Toss lightly to mix. Add the sliced grilled chicken on top, sprinkle with feta cheese and kalamata olives. Drizzle the prepared lemon-oregano dressing over the salad and toss gently to combine.
