Method

Preparing the Zucchini

    Slice the Zucchini

    Wash the zucchini thoroughly and slice them into 1/4 inch thick rounds.

    Prepare the Breading

    In three separate bowls, place the flour mixed with salt and pepper, beaten eggs, and cornmeal mixed with salt and pepper. This will be your breading station.

    Bread the Zucchini

    Dip each zucchini slice first into the flour, shaking off any excess, then into the egg wash, and finally coat with cornmeal until fully covered.

Frying the Zucchini

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until hot.

    Fry the Zucchini

    Carefully add the breaded zucchini slices in batches to the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Once cooked, transfer the zucchini to a plate lined with paper towels to drain excess oil. Keep warm while you fry the remaining batches.

Making the Lemon Aioli

    Combine Ingredients

    In a bowl, combine mayonnaise, minced garlic, lemon juice, lemon zest, salt, and black pepper.

    Mix Well

    Whisk together until the mixture is smooth and creamy. Adjust seasoning to taste.

    Chill

    Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

    Plate the Dish

    Arrange the crispy zucchini slices on a serving platter.

    Serve with Aioli

    Serve the crispy zucchini hot with the lemon aioli on the side for dipping.
