Chicken Preparation

Dipping Sauce (optional)

Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Begin by cutting the chicken breasts into strips about 1 inch wide. This will allow for even cooking and easy handling.

  2. 2

    Season the Chicken

In a bowl, season the chicken strips with salt, black pepper, and garlic powder. Toss to ensure the chicken is well coated with the seasoning.

  3. 3

    Prepare the Egg Wash

In a separate bowl, whisk the eggs until well combined. This will be used to help the breading stick to the chicken.

Breading

  1. 4

    Prepare the Breading Mixture

In a shallow dish, mix together the all-purpose flour, cornmeal, paprika, dried thyme, and dried oregano. This mixture will provide a crunchy and flavorful coating.

  2. 5

    Coat the Chicken Strips

Dredge each seasoned chicken strip in the flour-cornmeal mixture, shaking off any excess. Then dip it into the egg wash, allowing any excess to drip back into the bowl. Finally, return to the flour-cornmeal mixture to coat again. Repeat until all chicken strips are coated.

Cooking

  1. 6

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles, the oil is ready.

  2. 7

    Fry the Chicken Strips

Carefully place the coated chicken strips into the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the chicken and place it on a plate lined with paper towels to drain excess oil.

Dipping Sauce

  1. 8

    Prepare Dipping Sauces

If desired, serve honey mustard and barbecue sauce in small bowls as dipping options alongside the chicken fingers.
