Prepare the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 inch wide.

Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the soaked fries and pat them dry with paper towels to remove excess moisture.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Carefully add the fries to the hot oil in batches. Fry them for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
