    Brown the Beef

    In a large pot, heat olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.

    Cook Vegetables

    In the same pot, add chopped onion, diced carrots, and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Add Mushrooms

    Stir in the sliced mushrooms and cook until they are softened, about 3 minutes.

    Combine Ingredients

    Return the browned beef to the pot. Pour in the beef broth, dark ale, Worcestershire sauce, thyme, salt, and pepper. Bring to a simmer.

    Thicken the Filling

    In a small bowl, mix cornstarch with water to create a slurry. Stir the slurry into the filling and cook until thickened, about 2 minutes. Remove from heat and let cool.

    Make the Dough

    In a large bowl, mix flour and salt. Cut in the chilled butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roll Out Dough

    On a floured surface, roll out half of the chilled dough to fit a pie dish. Place the dough into the dish.

    Fill the Pie

    Spoon the cooled beef filling into the pie crust.

    Top with Dough

    Roll out the remaining dough and place it over the filling. Seal the edges and cut slits in the top for steam to escape.

    Bake the Pie

    Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
