Method

Cooking Pasta

  1. 1

    Boil Water

Fill a large pot with water and bring it to a boil. Add a generous amount of salt.

  2. 2

    Cook Spaghetti

Once the water is boiling, add 400g of spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

Preparing Sauce

  1. 3

    Cook Pancetta

In a large skillet over medium heat, add 150g of pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 4

    Mix Eggs and Cheese

In a mixing bowl, whisk together 4 large eggs, 100g of grated Parmesan cheese, and freshly ground black pepper until well combined.

  3. 5

    Combine Ingredients

Add the hot drained spaghetti to the skillet with pancetta. Quickly pour the egg and cheese mixture over the hot pasta, stirring continuously to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  1. 6

    Plate the Dish

Serve the spaghetti carbonara in bowls, garnished with freshly chopped parsley and additional black pepper, if desired.
