Method

Pasta Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, wash and chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes. Set the vegetables aside.

Sauce Preparation

  1. 3

    Make the Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

  2. 4

    Add Vegetables

Add the chopped bell peppers, zucchini, carrot, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender but still vibrant.

  3. 5

    Season the Vegetables

Stir in the spinach and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.

Combine and Serve

  1. 6

    Combine Pasta and Vegetables

Add the drained pasta to the skillet with the vegetables. Toss everything together to combine thoroughly.

  2. 7

    Serve with Parmesan

Remove from heat and sprinkle the grated Parmesan cheese over the pasta primavera. Serve warm.
