Prepare Base

Combine Milk and Cream
In a medium saucepan, add 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until just steaming, but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together 4 egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon until the mixture thickens enough to coat the back of the spoon (about 5-7 minutes).

Add Flavoring
Remove from heat and stir in 1 teaspoon of vanilla extract. If adding additional flavors, incorporate them at this point (e.g., puree strawberries, dissolve cocoa powder, steep mint leaves in the warm mixture).

Chill the Mixture
Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 4 hours or overnight.
Churn and Freeze

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
