Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Allow them to dry on a clean kitchen towel for about 15 minutes.

    Blend the Ingredients

    In a food processor, combine the chickpeas, chopped parsley, chopped cilantro, minced garlic, chopped onion, ground cumin, ground coriander, baking powder, flour, salt, and pepper. Pulse until the mixture is coarsely blended but not pureed.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

    Heat the Oil

    In a large skillet or deep pan, heat the vegetable oil over medium heat until it reaches 350°F (180°C).

    Fry the Falafel

    Carefully add the falafel balls to the hot oil in batches, frying for about 3-4 minutes on each side or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

    In a mixing bowl, combine the tahini, minced garlic, lemon juice, water, and salt. Whisk together until smooth and creamy. Adjust the consistency with more water if needed.
