Prepare the Bread
Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2-inch thick slices. Arrange the slices on a baking sheet.

Toast the Bread
Brush the tops of the bread slices with 1 tablespoon of olive oil. Toast in the preheated oven for about 5-7 minutes or until golden brown and crispy. Remove from the oven and set aside.
Tomato Mixture

Prepare the Tomatoes
While the bread is toasting, wash and dice the fresh tomatoes into small cubes. Place them in a mixing bowl.

Add Basil and Seasoning
Chop the fresh basil leaves and add them to the bowl with the tomatoes. Add the balsamic vinegar, 2 tablespoons of olive oil, salt, and black pepper. Stir gently to combine and let the mixture sit for about 10 minutes to allow the flavors to meld.

Prepare the Mozzarella
While the tomato mixture sits, slice the fresh mozzarella cheese into thin rounds.

Assemble the Bruschetta
Once the bread is toasted, top each slice with a spoonful of the tomato and basil mixture. Add a slice of mozzarella on top of each. Drizzle with the remaining tablespoon of olive oil and a sprinkle of additional salt and pepper if desired.

Serve the bruschetta immediately while the bread is still warm, garnished with extra basil leaves if desired.
