Method

Preparing the Booche Dough

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine flour and salt. Mix well.

  3. 3

    Combine Ingredients

Add the frothy yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.

  4. 4

    Knead Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  5. 5

    Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preparing the Filling

  1. 6

    Prepare Ingredients

While the dough is rising, prepare the filling by shredding the corned beef and draining the sauerkraut. Set aside.

  2. 7

    Grate Cheese

Grate the Swiss cheese and set aside for assembly.

Assembling and Cooking the Booche Ruben

  1. 8

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 9

    Roll Out Dough

Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about 1/4 inch thick.

  3. 10

    Layer Filling

Spread a layer of Russian dressing on the dough, followed by the corned beef, sauerkraut, and grated Swiss cheese.

  4. 11

    Roll and Shape

Roll the dough tightly from one end to the other to form a log. Pinch the seams to seal.

  5. 12

    Cut and Arrange

Cut the log into 2-inch pieces and place them seam-side down on a greased baking sheet.

  6. 13

    Brush with Butter

Melt the butter and brush it over the tops of the booche for a golden finish.

  7. 14

    Bake

Bake in the preheated oven for 20-25 minutes, or until golden brown.

  8. 15

    Cool and Serve

Remove from the oven and let cool slightly before serving. Enjoy your Booche Ruben!
