    Prepare the Chorizo

    Slice the chorizo into thin rounds.

    Garlic and Olives

    Peel and finely chop the garlic. Combine the olives and garlic in a bowl.

    Roast the Cherry Tomatoes

    Place the cherry tomatoes on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast in a preheated oven at 200°C (400°F) for about 15 minutes until blistered.

    Prepare the Mini Peppers

    Slice the mini peppers in half, remove the seeds, and drizzle with olive oil and a pinch of salt.

    Garnish

    Chop the fresh parsley and sprinkle over the prepared tapas before serving.

Paella

    Sauté the Chicken

    Heat 2 tablespoons of olive oil in a large paella pan or skillet over medium heat. Add the chicken thighs, season with salt and black pepper, and cook until browned on all sides. Remove from the pan and set aside.

    Cook the Rice

    In the same pan, add the remaining olive oil and the chopped garlic. Sauté for 1 minute until fragrant. Add the paprika and the Bomba rice, stirring to coat the rice in the oil.

    Add Stock and Saffron

    Pour in the fish stock and add the saffron threads. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes without stirring.

    Add Chicken and Shrimp

    Return the chicken to the pan and add the shrimp and green peas. Continue to cook for another 10-15 minutes until the rice is tender and the liquid has absorbed.

    Garnish and Serve

    Remove from heat and let the paella rest for 5 minutes. Squeeze fresh lemon juice over the top and serve with the prepared tapas.
