Tapas Preparation

    Slice the chorizo sausages into bite-sized pieces.

    Cook the Pimientos de Padrón

    Heat 1 tablespoon of olive oil in a skillet over medium heat, add the pimientos, and sauté for 5-7 minutes until they are blistered. Season with sea salt and set aside.

    Sauté the Chorizo

    In the same skillet, add another tablespoon of olive oil and the sliced chorizo. Cook for about 5 minutes until browned and crispy.

    Add Garlic and Parsley

    Mince the garlic and add it to the skillet along with the chopped parsley. Cook for an additional 2 minutes, stirring to combine.

Paella Preparation

    Prepare the Chicken

    Cut the chicken thighs into bite-sized pieces, season with salt and pepper.

    In a large paella pan or skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken and sear for about 5-7 minutes until golden brown.

    Arrange the shrimp on top of the rice, and sprinkle the green peas evenly. Do not stir after this point.

    Reduce the heat to low, cover the pan with a lid or foil, and let it cook for an additional 10-15 minutes until the rice is tender and has absorbed the liquid.
