Soak Sausage Casings
Start by soaking the natural sausage casings in cold water for about 30 minutes to make them pliable.

Mix Ingredients
In a large mixing bowl, combine the ground chicken and optional pork fat. Add maple syrup, salt, black pepper, garlic powder, onion powder, dried sage, dried thyme, and crushed red pepper flakes. Mix thoroughly until all ingredients are well combined.

Stuff Sausages
Rinse the soaked casings under cold water and slide one end of the casing onto a sausage stuffer. Carefully fill the casing with the chicken mixture, taking care not to overstuff. Tie the ends of the casing securely.

Once the sausages are stuffed and tied, refrigerate them for at least 1 hour to allow the flavors to meld.

Preheat a skillet over medium heat. Add a small amount of oil if desired, and cook the sausages for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
