Preparation

    Prep the Seafood

    Clean and devein the shrimp, and slice the calamari into rings. Rinse the mussels and clams under cold water to remove any sand or grit.

    Prepare the Aromatics

    Chop the onion and mince the garlic. Dice the tomatoes and set aside. Rinse the fresh basil and chop it coarsely.

Cooking

    Sauté Aromatics

    In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Rice

    Stir in the diced tomatoes, and cook for another 5 minutes. Add the paella rice and saffron, stirring to coat the rice with the oil and tomato mixture.

    Add Broth

    Pour in the chicken or seafood broth, season with salt and black pepper, and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for about 15 minutes.

    Incorporate Seafood

    After 15 minutes, stir in the shrimp, calamari, scallops, mussels, and clams. Cover again and cook for an additional 10 minutes, or until the seafood is cooked through and the rice is tender.

    Finish with Peas and Basil

    In the last few minutes of cooking, stir in the peas and chopped basil. Adjust seasoning with salt and pepper if necessary.

    Serve

    Remove from heat and let it rest for 5 minutes before serving. Serve warm, garnished with additional basil if desired.
