Prepare the Protein
Cut the chicken thighs into bite-sized pieces, cube the beef brisket, and slice both the fresh and dry chorizo.

Cooking the Paella

Sauté the Proteins
In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chicken, beef brisket, fresh chorizo, and dry chorizo. Cook until browned, about 5-7 minutes. Remove from the pan and set aside.

Add Rice and Seasonings
Stir in the bomba rice, smoked paprika, salt, and black pepper. Cook for 2 minutes, allowing the rice to soak up the flavors.

Add Broth and Saffron
Pour in the chicken broth and add the saffron threads. Stir to combine, then bring to a simmer.

Combine and Cook
Return the browned chicken and beef to the pan. Reduce heat to low and let simmer uncovered for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

Let it Rest
Remove from heat and let the paella rest for 5 minutes with a clean kitchen towel over it.
