    Prepare the Saffron

    Soak the saffron threads in a small bowl with 2 tablespoons of warm water for about 10 minutes.

    Chop Ingredients

    Dice the bell pepper, chop the onion, and mince the garlic. Set aside.

Cooking

    Cook Chicken and Chorizo

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs, season with salt and black pepper, and cook until browned. Remove and set aside. In the same pan, add the chorizo and cook until slightly crispy.

    Sauté Vegetables

    Add the chopped onion, bell pepper, and minced garlic to the pan. Sauté until the onion is translucent, about 5 minutes.

    Add Rice and Broth

    Stir in the Bomba rice and sauté for another 2 minutes. Then add the chicken broth, soaked saffron (with water), paprika, and chopped tomato. Bring to a boil.

    Combine Chicken and Seafood

    Return the browned chicken to the pan. Once boiling, reduce heat to low and simmer for about 15 minutes without stirring. After 10 minutes, add the seafood mix and frozen peas on top.

    Final Cooking

    Continue to cook for another 5-7 minutes until the rice is tender and the seafood is cooked. If necessary, add a little more broth to prevent sticking.

Serving

    Serve the Paella

    Remove the pan from heat. Let it rest for 5 minutes. Garnish with parsley if desired. Serve directly from the pan for a traditional touch.
