    Clean the Clams

    Rinse the littleneck clams under cold running water. Scrub the shells with a brush to remove any sand or debris. Soak them in a bowl of cold water for about 20 minutes to help purge any remaining sand.

    Prep the Vegetables

    Peel the pearl onions and set them aside. Mince the garlic cloves.

    Prepare the Baguette

    Slice the baguette into diagonal pieces, about 1-inch thick. Brush one side of each slice with olive oil.

Cooking

    Cook the Chorizo

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chorizo sausage and cook until browned, about 5-7 minutes. Remove the chorizo and set aside, leaving the drippings in the pot.

    Sauté the Onions and Garlic

    In the same pot, add the pearl onions and sauté for 3-4 minutes until they start to caramelize. Add the minced garlic and sauté for an additional 1 minute until fragrant.

    Add the Vegetables and Liquid

    Stir in the cauliflower florets, diced tomatoes, vegetable broth, salt, and black pepper. Bring the mixture to a simmer.

    Add the Clams

    Once the broth is simmering, add the cleaned littleneck clams to the pot. Cover and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.

    Finish the Dish

    Return the cooked chorizo to the pot and stir to combine. Let it heat through for another 2 minutes.

    Grill the Baguette

    While the clams are cooking, preheat a grill or grill pan. Grill the baguette slices until golden brown, about 2-3 minutes per side.

    Plate the Dish

    Ladle the clam and chorizo mixture into bowls. Garnish with chopped parsley and serve with grilled baguette slices on the side.
