Prepare the Vegetables
Preheat the oven to 400°F (200°C). Slice the fennel bulbs into wedges and rinse the fingerling potatoes, then cut them in half lengthwise.

Prepare the Oranges
Zest one orange and then juice both oranges, setting the juice aside for the sauce.
Cooking the Sausage and Vegetables

Roast the Fennel and Potatoes
In a large mixing bowl, toss the fennel wedges and fingerling potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.

Grill the Sausages
While the vegetables are roasting, preheat a grill or grill pan over medium heat. Grill the chicken apple sausages for about 12-15 minutes, turning occasionally until they are cooked through and have nice grill marks.
Making the Sauce

Prepare the Olive & Raisin Sauce
In a small saucepan over medium heat, combine the raisins, orange juice, and zest. Cook for about 5-7 minutes until the raisins are plump. Stir in the remaining 1 tablespoon of olive oil, salt, and pepper, and remove from heat.
Serving

Plate the Dish
On each plate, arrange the roasted fennel and potatoes, place the grilled sausage on top, and drizzle the olive and raisin sauce over the dish. Serve warm.
