Custard Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Juices
In a medium bowl, whisk together the pomegranate juice and orange juice until fully combined.

Combine Sugar and Eggs
In a separate bowl, whisk the granulated sugar and eggs together until the mixture is smooth and pale in color.

Add the Cream and Vanilla
Add the heavy cream and vanilla extract to the egg mixture, stirring until well blended.

Combine All Mixtures
Slowly pour the juice mixture into the egg mixture, whisking continuously to prevent curdling.

Pour into Ramekins
Pour the custard mixture into small ramekins or a baking dish, filling them about 3/4 full.

Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Then, refrigerate for at least 2 hours or until fully chilled.

Prepare Fresh Fruit
While the custards are chilling, prepare the toppings by slicing the orange and separating the pomegranate seeds.

Garnish the Custard
Once the custards are chilled, remove them from the refrigerator and top each custard with fresh pomegranate seeds, orange slices, and a sprinkle of mint leaves.
