Prepare the Rabbit
Rinse the rabbit pieces under cold water and pat them dry with paper towels. Season well with salt, black pepper, and pimentón. Let them marinate for about 30 minutes.

Sauté the Vegetables
In a large heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and sauté until transparent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

Brown the Rabbit
Increase the heat to medium-high and add the seasoned rabbit pieces to the pot. Brown the rabbit on all sides, about 10 minutes. Remove the rabbit and set aside.

Combine Ingredients
Add the diced tomatoes and return the browned rabbit to the pot. Stir to combine all ingredients.

Add Broth and Simmer
Pour in the mushroom broth and bring the mixture to a gentle simmer. Add the fresh thyme. Cover and cook on low heat for 1.5 to 2 hours, or until the rabbit is tender.

Once the rabbit is tender, taste and adjust seasoning if necessary. Serve hot, garnished with additional fresh thyme if desired.
