Method

Preparing the Beef Tenderloin

    Season the Beef

    Pat the beef tenderloin dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Beef

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the beef tenderloin and sear for about 4-5 minutes on each side, or until a nice crust forms. Use a meat thermometer to ensure the internal temperature reaches 130°F for medium-rare. Remove from the skillet and let rest.

Cooking Rice and Beans

    Sauté Aromatics

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 2-3 minutes.

    Cook Rice

    Add the white rice to the saucepan and stir for 1-2 minutes. Then, pour in 2 cups of water and bring to a boil. Cover and reduce heat to low, cooking for about 15-18 minutes until the rice is fluffy.

    Heat Beans

    In the last 5 minutes of rice cooking, add the canned black beans (drained and rinsed) to the rice. Stir to combine and let heat through.

Preparing Vegetables

    Chop and Sauté Vegetables

    Chop the bell pepper, zucchini, and carrot into bite-sized pieces. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the chopped vegetables. Sauté for about 5-7 minutes or until tender and slightly caramelized.

Making Chorizo Crumble

    Cook Chorizo

    In a small skillet, add 1 tablespoon of olive oil and the chorizo sausage. Cook over medium heat, breaking it apart with a spatula, until browned and crispy, about 5-7 minutes. Drain excess fat if needed.

Preparing Piquillo Chimichurri Sauce

    Blend Sauce Ingredients

    In a blender, combine the piquillo peppers, fresh parsley, garlic, red wine vinegar, olive oil, salt, and black pepper. Blend until smooth and adjust seasoning to taste.

Final Assembly

    Plate the Casamiento

    On a large plate, serve a portion of rice and beans, topped with sautéed vegetables. Slice the beef tenderloin and place on top. Sprinkle the chorizo crumble over the beef, and drizzle with piquillo chimichurri sauce before serving.
