Preparation of Calamari

Clean and Prepare Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Season Flour
In a shallow dish, mix the all-purpose flour with salt and black pepper.
Cooking

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Coat Calamari
Dredge the calamari rings in the seasoned flour, shaking off any excess.

Fry Calamari
Fry the calamari in batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.
Garlic and Capers

In a separate small pan, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the crispy capers and smoked paprika to the garlic, stirring to combine. Remove from heat.
Make the Orange Horseradish Crema

In a bowl, combine sour cream, horseradish, orange zest, and lemon juice. Mix well until smooth.

Arrange the fried calamari on a serving platter. Drizzle the sautéed garlic and caper mixture over the top.
