Brisket Preparation

    Season the Brisket

    In a small bowl, mix onion powder, garlic powder, smoked paprika, salt, and black pepper. Rub this seasoning mixture all over the beef brisket.

    Braise the Brisket

    In a large pot or Dutch oven, add the seasoned brisket and pour in the beef broth. Bring to a simmer over medium heat, cover, and reduce to low heat. Braise for 3-4 hours, until the brisket is tender.

    Shred the Brisket

    Once cooked, remove the brisket from the pot and let it rest for 15 minutes. Shred the brisket using two forks.

    Roast the Vegetables

    While the brisket is braising, preheat the oven to 400°F (200°C). Slice the bell peppers and onion into strips. Toss them in olive oil, then spread them on a baking sheet. Roast for 20-25 minutes until tender and slightly charred.

    Combine Ingredients

    In a large bowl, combine the shredded brisket, roasted peppers, and onions. Mix in the smoky BBQ sauce until well coated.

    Prepare the Rolls

    Slice the sub rolls in half. Place a generous amount of the brisket mixture on the bottom half of each roll. Top with shredded manchego cheese.

    Serve

    Close the rolls and serve immediately, or place them under a broiler for 2-3 minutes to melt the cheese before serving.
