Tuna Preparation

    Prepare the Tuna

    Season the yellowfin saku tuna with salt and black pepper. Heat olive oil in a skillet over high heat until shimmering.

    Sear the Tuna

    Sear the tuna for about 30 seconds on each side for a rare finish. Remove from the heat and let it rest before slicing into bite-sized cubes.

Lemon Basil Crema Preparation

    Blend the Ingredients

    In a blender, combine sour cream, fresh basil leaves, lemon juice, garlic, and salt. Blend until smooth and creamy.

    Chill the Crema

    Transfer the lemon basil crema to a bowl and refrigerate for at least 30 minutes to enhance the flavors.

Chili Avocado Purée Preparation

    Prepare the Avocado Mixture

    In a blender, mash the ripe avocados. Add lime juice, red chili pepper (seeded and chopped), and salt to taste. Blend until smooth.

Sweet Potato Hay Preparation

    Prepare Sweet Potatoes

    Peel and thinly slice the sweet potatoes using a mandoline or a sharp knife.

    Fry the Sweet Potatoes

    Heat vegetable oil in a deep pan over medium heat. Fry the sweet potato slices in batches until golden and crispy, about 2-3 minutes. Remove and drain on paper towels. Season with salt to taste.
