Meatballs Preparation

    Mixing Ingredients

    In a large bowl, combine the ground pork, breadcrumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Forming Meatballs

    With your hands, shape the mixture into small meatballs, about 2.5 cm in diameter. Place the formed meatballs on a baking sheet lined with parchment paper.

    Chilling Meatballs

    Refrigerate the meatballs for at least 30 minutes to help them hold their shape while cooking.

Sauce Preparation

    Sautéing Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Deglazing with Wine

    Pour in the red wine and bring it to a simmer, scraping the bottom of the skillet to deglaze it. Let it reduce by half, about 5-7 minutes.

    Adding Figs and Broth

    Stir in the chopped figs, broth, dried thyme, and bay leaf. Simmer for an additional 10 minutes until the figs become soft.

    Finishing the Sauce

    Remove the bay leaf and stir in the crumbled bleu cheese until melted. Season with salt and pepper to taste.

Cooking Meatballs

    Browning Meatballs

    In the same skillet used for the sauce, add the chilled meatballs in batches and brown them on all sides, about 8-10 minutes.

    Simmering Meatballs in Sauce

    Once browned, pour the sauce over the meatballs in the skillet. Cover and simmer for 15-20 minutes until the meatballs are cooked through and the flavors meld together.
