Olives

Method

Preparation of Olives

  1. 1

    Combine Olives

In a large mixing bowl, combine the green olives, black olives, pimento-stuffed olives, and Castelvetrano olives. Gently toss to mix the different types of olives together.

Marinade Preparation

  1. 2

    Prepare Marinade

In a separate bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, chopped parsley, dried oregano, crushed red pepper flakes, salt, and black pepper until well combined.

  2. 3

    Combine Marinade and Olives

Pour the marinade over the mixed olives and gently toss to ensure all olives are evenly coated with the marinade.

Marinating

  1. 4

    Marinate

Cover the bowl with plastic wrap or transfer the olives and marinade to a jar with a tight-fitting lid. Allow the olives to marinate in the refrigerator for at least 2 hours, preferably overnight, to enhance the flavors.

Serving

  1. 5

    Serve

After marinating, serve the aceitunas mixtas in a decorative bowl as a delicious appetizer or snack. Enjoy with toothpicks or as part of a charcuterie board.
