Cooking Instructions
- 1
Prepare the Ribs
Trim excess fat from the beef short ribs and pat them dry with a paper towel.
- 2
Season the Ribs
In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the short ribs, ensuring they are evenly coated.
- 3
Preheat the Smoker
Preheat your smoker to 225°F (107°C) and add wood chips of your choice for smoking. Hickory or oak works well with beef.
- 4
Smoke the Ribs
Place the seasoned ribs in the smoker, bone side down. Smoke for approximately 4-5 hours, or until the internal temperature reaches about 203°F (95°C).
- 5
Prepare for Braising
Remove the smoked ribs from the smoker and place them in a large roasting pan. Drizzle with olive oil and sprinkle the liquid smoke over the top. Pour the beef broth into the bottom of the pan.
- 6
Cover and Cook
Cover the roasting pan tightly with aluminum foil and place it in a preheated oven at 300°F (150°C). Cook for an additional 2-3 hours until they are tender and fall off the bone.
- 7
Rest and Serve
Remove from the oven and let the ribs rest for 15-20 minutes before serving. Serve with your choice of sides.
