Grilled Fish

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

    Marinate the Fish

    Place the fish fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator.

    Grill the Fish

    Preheat the grill to medium-high heat. Grill the marinated fish fillets for about 4-5 minutes on each side, or until cooked through and flaky. Remove from grill and sprinkle with fresh parsley.

Saffron Rice

    Prepare the Saffron

    In a small bowl, soak saffron threads in 2 tablespoons of warm water for about 10 minutes.

    Cook the Rice

    In a medium saucepan, combine basmati rice, water, soaked saffron (with its water), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and water is absorbed. Stir in butter before serving.

Crawfish Etouffee

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion, celery, and bell pepper. Sauté until softened, about 5-7 minutes.

    Add Garlic and Tomato Paste

    Stir in minced garlic and tomato paste. Cook for an additional 2 minutes, stirring frequently.

    Add Crawfish and Seasonings

    Add crawfish tails, chicken broth, Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for about 10 minutes, allowing the flavors to meld.

    Thicken the Sauce

    In a small bowl, mix the flour with a little water to form a slurry. Stir this into the etouffee until thickened, about 2-3 minutes.

    Remove from heat and stir in fresh parsley. Serve the crawfish etouffee over the saffron rice and top with grilled fish.
